How does Bobby Flay's The Line work?

Two teams of four chefs each serve 240 plates to 40 diners in 90 minutes — twelve dishes per diner, six from each kitchen. Diners score every dish up to five stars without being told which kitchen cooked it, so each team can earn up to 1,200 points. A VIP diner can award bonus points. If the visiting restaurant's team wins, they take $25,000.
